Serve these versatile
meatballs as hors d'oeuvres at your next dinner party or serve over Asian
noodles to make a meal of it. Either way, sit back and wait for the
compliments to roll in.
Preheat oven to 400 degrees. In a bowl add eggs, fish sauce, garlic, green onions and the optional mint and whisk.
Add the meat and breadcrumbs. Mix well with your hands and roll the mixture into balls and place onto a non-stick baking sheet. Bake for 20-25 minutes until cooked through and browned.
While the meatballs are cooking make the sauce. Combine all the ingredients into a sauce pan and cook over low heat stirring constantly until the sugar is melted. Add water if needed to get your desired consistency.
When finished roll the meatballs a few at a time into the sauce and serve over rice or Asian noodles. Sprinkle with green onions, fresh mint and peanuts.
