If you have not tried asian meatballs... you need to. This recipe is so simple, and will be a huge hit at the next event you need to bring a dish to!

Ingredients

Meatballs
-
3 large eggs
-
3 Tbs of fish sauce or if you don't have it on hand use (1 ½ Tbs soy sauce & 1 ½ Tbs rice vinegar)

4 garlic cloves, minced
-
1 Tbs fresh ginger, grated
-
3 green onions, chopped
-
3 Tbs fresh mint, chopped
-
1 ½ lbs ground beef (can use half pork half beef)

1 cup of breadcrumbs (I like to use fresh very small chunks of day old bread)

¼ cup peanuts
Sauce
-
¼ cup soy sauce
-
2 Tbs rice vinegar
-
½ cup PurDate sugar
-
1 Tbs fresh ginger, grated
-
Splash of Sriracha sauce or more to your liking
Directions
Preheat oven to 400 degrees. In a bowl add eggs, fish sauce, garlic, green onions and the optional mint and whisk.
Add the meat and breadcrumbs. Mix well with your hands and roll the mixture into balls and place onto a non-stick baking sheet. Bake for 20-25 minutes until cooked through and browned.
While the meatballs are cooking make the sauce. Combine all the ingredients into a sauce pan and cook over low heat stirring constantly until the sugar is melted. Add water if needed to get your desired consistency.
When finished roll the meatballs a few at a time into the sauce and serve over rice or Asian noodles. Sprinkle with green onions, fresh mint and peanuts.
Serve these versatile meatballs as hors d'oeuvres at your next dinner party or serve over Asian noodles to make a meal of it. Either way, sit back and wait for the compliments to roll in. |
