This delicious cashew
salad is perfect as a side or as its own meal with a bit of added protein!
It's a perfect go-to for those hot summer days when you don't want to cook.
Our salad is far from boring. The different colors included assure you that you are getting plenty of variety of veggies. This crunchy cashew salad will make your mouth water, paired with our most tempting dressing to make a masterpiece!

Ingredients
1/2 head of green cabbage, finely shredded
1/2 head of purple cabbage, finely shredded
2 cups carrots, chopped or shredded
1 cup fresh cilantro, chopped
1/2 cup sliced green onions
2 cups cooked edamame
2 cups roasted cashews (optional)
1 cup crunchy chow mein noodles
Chicken, shrimp, or any other protein you prefer (optional)
Combine all of the dressing ingredients in a jar and shake. You can make this ahead of time.
Chop and prepare salad ingredients. You can do this step ahead of time as well. I like to fry my chow mein noodles in a skillet with a little butter or olive oil but this isn't necessary.
Mix all ingredients together and top with sesame dressing.

If you keep
the cashews, meat or protein, and dressing separate, it will keep in the
fridge up to 3 days.
