Crunchy Cashew Salad and Dressing

Our salad is far from boring. The different colors included assure you that you are getting plenty of variety of veggies. This crunchy cashew salad will make your mouth water, paired with our most tempting dressing to make a masterpiece!
Ingredients

1/2 head of green cabbage, finely shredded

1/2 head of purple cabbage, finely shredded

2 cups carrots, chopped or shredded

1 cup fresh cilantro, chopped

1/2 cup sliced green onions

2 cups cooked edamame
-
2 cups roasted cashews (optional)

1 cup crunchy chow mein noodles

Chicken, shrimp, or any other protein you prefer (optional)

1/4 cup good quality olive oil

3 tablespoons white vinegar
-
2 tablespoons sesame oil
-
2-4 tablespoons PurDate sugar (depending on preferred sweetness)

1 teaspoon salt
-
a few shakes of garlic powder
-
1/4 cup Greek yogurt or mayo (optional)

1/2 Tbsp sesame seeds
Directions
Combine all of the dressing ingredients in a jar and shake. You can make this ahead of time.
Chop and prepare salad ingredients. You can do this step ahead of time as well. I like to fry my chow mein noodles in a skillet with a little butter or olive oil but this isn't necessary.
Mix all ingredients together and top with sesame dressing.
Recipe Note
If you keep the cashews, meat or protein, and dressing separate, it will keep in the fridge up to 3 days.
