These gingerbread muffins are pack with spices and date sugar! That means loads of antioxidants in just one muffin.
1 1/4 cup non-dairy milk
1/4 cup oil
2 tsp maple syrup
2 tsp molasses (You can sub 4 Tbsp of date syrup for the maple syrup or molasses)
1 inch knob of fresh ginger
2/3 cup + 2 Tbsp PurDate sugar (plus more for sprinkling)
3/4 tsp ground ginger
1 tsp cinnamon
large pinch each of ground cloves, allspice and nutmeg
1 tsp vanilla extract
1 1/2 cup flour
1/4 tsp salt
2 tsp baking powder
1/3 tsp baking soda
3 Tbsp chopped candied ginger (optional)
Preheat the oven to 365 degrees. Spray or grease a muffin tin.
Mix dry ingredients in a large bowl. Add the optional candied ginger and coat well with dry ingredients.
Mix wet ingredients in a medium bowl and slowly incorporate into the dry ingredients.
Pour batter into muffin pan and bake for 15-18 mins at 365 degrees. Muffins are finished when an inserted toothpick comes out clean.
Remove from oven and sprinkle a dusting of PurDate sugar over the top.
