Healthy Sweet Potato Casserole

Ingredients

4 cups of peeled and cubed sweet potatoes

2 eggs
-
½ PurDate Sugar or more to desired sweetness

½ cup milk
-
4 Tbsp softened butter
-
½ tsp vanilla extract
-
½ tsp salt
Topping
-
½ cup PurDate sugar
-
5 Tbsp softened butter
-
⅓ cup flour
-
½ cup chopped pecans or walnuts
Directions
Preheat oven to 325 F and lightly grease a 9x13 - inch casserole baking dish.
Cook sweet potatoes in boiling water until a fork can easily poke through. About 10-15 minutes. Drain and transfer to a bowl.
Mash sweet potatoes with a fork and add eggs, PurDate sugar, milk, butter, vanilla, and salt. Mix until smooth either with a fork or electric mixer. Transfer to casserole dish.
Make the topping by creaming the butter with the PurDate sugar and mixing in the flour and the nuts. Sprinkle topping over mixture.
Bake in oven for about 30 minutes until the topping is lightly browned.
