Pumpkin pies can't be healthy... can they? This one is! Purdate's spin on pumpkin pie is loaded with nutrition, all thanks to PurDate date sugar! You can eat a slice of this guilt free!
2 cups pumpkin puree
1 ½ cups milk or one 12 oz can of evaporated milk
1 cup PurDate sugar sifted
½ tsp salt
2 eggs + yolk of a third egg
2 tsp cinnamon
1 tsp ginger powder
¼ tsp nutmeg
¼ tsp ground cloves
¼ tsp cardamom powder

Mix date sugar, salt, and spices in a large bowl, stir in pumpkin puree.
Beat eggs and add to bowl.
Stir in milk and whisk all together until well incorporated.
Pour mixture into pie shell and bake at 450 F for 15 min then reduce heat to 350 bake for 40-50 min, or until knife inserted half way between center and edge comes out clean.
Cool for 2 hours before serving. Top with whipped cream. For a healthier option, top with coconut cream and PurDate sugar combined.
