This dessert is and has always been a crowd pleaser! Using fresh apples and pears in season make it a satisfyingly fresh option!

2 ½ pounds apples, peeled and chopped ¼ inch thick
2 ½ pounds pears, peeled and chopped ¼ inch thick
1/3 cup date sugar
½ tsp lemon zest
1 Tbsp lemon juice
¼ tsp salt
1 Tbsp cinnamon
1 tsp vanilla
2/3 cups date sugar
½ cup oats
80 grams butter (or vegan butter)
Pinch of salt
¼ tsp cinnamon
Handful of chopped walnuts (optional)
Date syrup (optional)
Prepare crust ahead of time or use a pre-made crust.
Preheat oven to 375 degrees Fahrenheit. Grease a 10-inch pie pan, or I like to use a cast iron skillet
Toss apples, pears, PurDate sugar, lemon zest, lemon juice, salt, and cinnamon together and cook over medium heat in skillet (or use the cast iron skillet you will be baking the crisp in for easier clean up) until fruit is tender but still holds its shape. You can leave out this option if you want to simplify the recipe.
Remove from heat and drain juice. Reserve ¼ cup of juice and save the rest for the crisp.
Add vanilla to the fruit and combine well.
Form homemade crust into a cast iron skillet. Arrange fruit mixture on top and pour ¼ of the fruit juice over the top.
Top with the crisp. To make the crisp, mix all ingredients together. You can add some of the left over juice or date syrup to the mixture depending on how wet you prefer the crisp.
Bake in preheated oven at 375 degrees Fahrenheit for about 35 minutes or until golden brown.
If the dish isn't quite sweet enough for you, try sprinkling some extra PurDate date sugar on top, then sticking it back into the oven to crisp everything up.
