Sweet Date Sugar Cornbread

Our take on cornbread will leave you with a smile on your face! We make ours with our very own date sugar (Purdate), and of course we pair it with some homemade chili.

Ingredients

1.5 cups PurDate sugar

170 grams butter (about 11 tbsp)

2 ½ cups buttermilk

2 cups cornmeal

1 cup flour
-
½ cup oil

1 tsp salt
-
1 tsp baking soda

5 eggs
Directions
Preheat oven to 375 degrees Fahrenheit. Grease a 9x13 inch baking pan.
Melt butter in a medium size saucepan. Remove from heat and stir in 1 cup date sugar. Add eggs and beat until well blended.
Combine buttermilk with baking soda add it to the saucepan. Add the remaining ingredients and mix by hand until well combined.
Pour into 9x13 inch pan and bake at 375 degrees Fahrenheit for 30-40 minutes or until toothpick comes out clean.
I love making this sweet cornbread for my kids because it doesn't have any processed sugars in the recipe. The fact that it is sweetened with the date fruit only makes it a healthy option. It is so sweet, they even like eating it for dessert! I love seeing the smiles on my children's faces when they are satisfied and nourished at the same time! |
